What happens when home brewed beer sits in a fridge too long?

I read that for bottle-conditioning it shouldn’t be kept in a refrigerator for more than a few hours and that bottle-conditioning should take place at room temperature. Why does it get skunky? Doesn’t light or high temperatures do that?
